Delicious wraps

Am I bananas or what? Okay I think I've made my point about how much I love bananas - but this time we're talking about what's around my bananas! Start your day right with some delicious selfmade wraps which are so easy to make. So read along and find out the delicious recipe you can pair with any kind of topping (cheese was really good too!)




Basic Wrap Batter (makes about 6):

  • 3|4 Almond milk (or any milk you like)
  • 1 small Apple
  • 1 Egg
  • 1 cup flour
  • 1|2 cup water
  1. Put apple in a mixer with water. Puree until it's a firm texture without crumbs.
  2. Mix together all ingredients and let sit in the fridge for at least one hour but best over night.
  3. Pour batter onto pan and flip wrap as soon as air bubbles apper underneath the surface. 
  4. Top with any desired topping and enjoy!

The Happy DeepDish

As I haven't felt like cooking pretty things in the last days I realized I needed to think about my behavior. Yup - I realized- I defenitly was feeling a little blue (totally underrating my feelings here...). Anyways I knew I could not wait until the weather gets a little sunnier (rain for what feels like a straight month) so I decited I need to pack all my powers and get myself out of this little hole I fell in. I do know that food is not helping with every problem but also do I know that it comes pretty close! As far as I can tell - making my food look amazing today made me feel great! I also tasted much more great flavour and I am so full from the first bite I took today! 


Therefore I would love to share my food, love and joy with you! Have a wonderful day! Remember that christmas is here soon, the great taste of hot chocolate, the smell of burning wood, the fresh breeze in your face ... all that makes you happy even on grey days!

Pasta Deep Dish (serves 4) :

  • 3 cups pasta of your choice
  • olive oil spray
  • 1 onion
  • half a head cauliflower
  • 1 block tofu
  • 1 red bell pepper
  • half a can coconut milk
  • 2 tablespoons cream cheese
  • seasonings such as salt, pepper, garlic, bell pepper, soy sauce, vegetable broth
  • a little shredded cheese as topping
  1. Preheat oven to 200°C
  2. Coat your dish with olive oil or whatever oil you desire.
  3. Spread pasta in your dish then add cauliflower setting 1-2 bigger florets aside.
  4. Meanwhile Heat oil in a pan and chop onion.
  5. Add onion and tofu to the pan. Season with salt, pepper and a splash of soy sauce. 
  6. Spread mixture over cauliflower and put your empty pan back on the stove.
  7. Add your roughly chopped bell pepper and remaining cauliflower. Season with vegetable broth and add coconut milk as well as water as desired. Once it cookes use a magic bullet to create a thick and creamy sauce.
  8. Season to taste and add cream cheese.
  9. When the cheese is melted add sauce to your dish and top with shredded cheese.
  10. Bake for at least 30 minutes.

Whatanuttycrust Quiche

If there is one thing that is just as delicious as easy to make - for me it will forever be quiche. whenever I don't feel too much like cooking (and I am not too hungry at the moment and would be able to wait around 40 minutes until I get to eat...) Quiche is the perfect solutuion to all my problems :)

Usually I prefer crustless quiche but this time I felt like trying something else. So here is my recipe for an easy tasty deep dish quiche.


Vegetarian quiche: (Serves 4)

Crust:
  • 3 Tbsp flaxseed meal + 1 Tbsp water (mix and let sit for a couple minutes)
  • 1 cup oats
  • 1 cup almonds
Filling:
  • 1 block tofu (200g)
  • 1,5 cups leek
  • 1 egg
  • 1|2 cup cottage cheese
  • 5-6 sundried tomatoes
  • 1 Tbsp dry yeast 
  1. Preheat oven to 200°C.
  2. Put all crust ingredients into a food processor and spread dough into oiled crust pan.
  3. Use a fork to pike holes into dough and put into the oven for 15 minutes.
  4. Meanwhile mix and season all ingredients except the yeast and tomatoes for the filling.
  5. Take out crust and fill with dough, Spread yeast flakes and tomatoes on top.
  6. Put back in the oven for 30-40 minutes.
  7. Enjoy your meal :)

Heartwarming Winter Banana Bread

So now that it's official and we finally opened the fire in the fireplace I am happy to call this day the official first day of fall :)

..let's be honest I had my pumpkin latte already ..

But here is my recipe for a healthy warm winter ginger-banana-chocolate-bread:


Winter Banana Bread

  • 2 cups oats
  • 1 cup walnuts
  • 1 banana
  • 2 eggs - seperated
  • 1 Tsp cinnamon
  • 1 Tsp gingerbread seasoning ( or any other like pumpkin)
  • 1 Tsp vanilla
  • 1 Tsp baking powder
  • 1 Tbsp maple syrup
  • dash of salt
  • 1|2 cup chocolate chips
  1. Preheat oven to 175° C.
  2. Grind oats and roughly chop walnuts. Mash Banana and set aside.
  3. Seperate eggs and stiffen egg whites.
  4. Mix all ingredients except egg whites.
  5. Carefully fold in the egg whites and chocolate chips or other desired toppings.
  6. Grease baking dish and add dough.
  7. Bake for 20 minutes until stick comes out clean.
  8. Enjoy your Bread warm in front of the fire place.

Fallin' for Fall

So as it now finally seems like summer has come to an end there is enough space to fill my time with a lot of baking and cooking fall stuff. So here we are : first casserole in a loooong long time!


Autumn Casserole (Serves 6)

  • 3 cups whole wheat pasta (save pasta drain)
  • 1 leek
  • 1 cup kale
  • 1|3 cup sundried tomatoes
  • 1|2 can coconut cream
  • 1|3 cup dry cranberries
  • 1|2 head cauliflower
  • 1|3 cup cream cheese
  • 2 dry figs
  • 2 Tbsp salted Cashew Butter (let me know if you are interested in my recipe)
  • 3 Tbsp shredded cheese of your choice
  • Seasonings such as 
    • salt & pepper
    • red bell pepper
    • chili
    • garlic
    • cinnamon
    • nutmeg
  1. Cook the cauliflower and the pasta in seperate pots. Be sure that both do not become too soft as they will get softer in the oven.
  2. In a seperate Pot heat a little coconut oil and sautee leek and kale for about five minutes.
  3. Add sundried tomatoes, cranberries and seasonings to taste.
  4. After another five minutes add coconut cream and let simmer on low for a couple minutes.
  5. Meanwhile preheat oven to 200°C and add your pasta and cauliflower to your sauce. Feel free to add a little pasta water if you feel like it becomes too thick.
  6. Add your cream cheese, nut butter and figs to a food processor and mix until you reach a creamy consistancy.
  7. Add your Casserole parts into a deep dish and top with nut cream and cheese.
  8. Bake for about ten minutes and enjoy your warm and comforting meal ;)

Pumpkin Scones

Is it already? Can it be that.. ? Really? The first Pumpkins are out there? I could not resist though! I am so ready. Away with the Watermelons and here you are Pumpkin Spice!

...yes I am that mainstream I just go ahead and post pumpkin everything.. deal with it ;)



Nutty Pumpkin Scones

  • 1 cup of Almonds
  • 2|3 cup Pumpkin
  • 1 Egg
  • 1 Tsp Vanilla
  • 1 Tbsp Maple Syrup
  • 1|4 cup Vanilla soy milk
  • about 1|2 Tbsp of each : cinnamon, nutmeg, ginger
  • 1|4 cup plain Jogurt
  • For a cinnamon swirl on top
    • 1 tsp cinnamon
    • 1 Tbsp Maple Syrup
    • 1 Tbsp Jogurt
  • Cream cheese topping
    • 1 Tbsp plain Cream Cheese
    • 1 Tsp cinnamon
    • a splash of Vanilla Soy Milk
  1. Preheat oven to 200°C
  2. Grate almonds, mix with dry ingredients and set aside.
  3. Mix Pumpkin together with wet ingredients in a food processor.
  4. Slowly mix dry ingredients into the wet batter.
  5. The texture should be slightly thick and creamy.
  6. Put onto a baking sheet and form into a round shape.
  7. Mix the topping ingredients together and swirl on top of the batch.
  8. Bake for 25 minutes on 200°C. Take the scones out an precut triangle sapes.
  9. Put back into the oven for another 15 minutes on 175°C.
  10. Let your scones cool down fully until you add your cream cheese topping.
  11. Gently mix your Cream cheese spread and drizzle over scones.
  12. Serve and enjoy the pretty time of the year!

Burger Waffles

Am I seriously the only oe who can never decite on what to eat? Do I feel like waffles? Burger? Chicken? ANYONE? Nope?! Oh..



Burger Waffles

  • 1 cup mashed potatoes 
  • 1-2 Eggs (to consistency)
  • 1|2 - 1 Cup oats (again to consistency)
  • Herbs and Seasonings
  • 1|3 cup cheese (either parmesan or cottage cheese)
  • Burger Toppings of choice:
    • Chicken Breast
    • Tomato
    • Cucumber or Pickles or both
    • tomato paste
    • balsamic vinegar
So first - if you start off by using potatoes that are not mashed yet like I do you have to pre- cook them which ist easiest if you just throw them into the microwave for a couple of minutes. The time depends on your microwave - I have a special potato programm but I usually keep them in there until I can pierce them with a fork easily. Let them cool for a bit.

  1. Mash your potatoes or just go from scraps.
  2. Mix in the Eggs and Oats until you get a thick, yet creamy consistency.
  3. If you feel like your batter is too dry mix in some milk of your choice.
  4. Add in the cream cheese and all seasonings you desire - As I like to have my savory waffles really tastful I love to add in a lot of seasonnings like salt, pepper, bell pepper, onion, garlic and oregano.
  5. Bake like regular Waffles.
  6. Top with anything you want. I highly recomment my version of pulled chichen breast, Tomato paste, dill pickles and balsamic vinegar!

Homemade Tortellini

So I have not cooked in too long now due to not feeling too well but here I am - fully back and ready for a fresh overall start. So what could be best to celebrate a huge comeback? Trying something completely new I thought. So here I went full out - homemade pasta. Not only pasta but tortellini. I just figured (afterwards) that this was a huge risk to take but it actually turned out amazing! Not to say this was probably the best meal I ever cooked! So of course I wanted to share the recipe with you guys, have fun making them and more fun enjoying them! <3




Tortellini in Tomato soup (Serves 3) :

For the soup:
  • 2 Cups veggie broth
  • 1 cup pasted tomatoes
  • water as desired
  • 1 onion
  • handful sundried tomatoes
  • seasonings
  • fresh basil
For Tortellini:
  • 1 cup flour
  • 2 eggs
  • salt
  • stuffing:
    • 1|2 cup cottage cheese
    • 1|4 cup cream cheese
    • 1|4 cup parmesan
    • seasonings
  1. Prepare your pasta dough by piling the flour and add salt and eggs into the middle of the flour slowly mixing in with your fingers. Take your time for this part and slowly fold in flour into eggs until you reach a good dough like consistency. Set aside for 30 minutes.
  2. Meanwhile prepare your stuffing by just mixing all the ingredients and add in seasonings like bell pepper powder, salt, pepper and dried basil.
  3. Chop onion and dry tomatoes and sautee in coconut oil. Season with smoky salt, fresh basil leaves and pepper.
  4. Add tomato paste and broth and bring to a simmer. Add in more basil if you want to and let cook on low heat.
  5. Roll out your dough and cut into squares. I found out that the smaller the squares the better the tortellini will turn out - otherwise you will have too much dough filled with too little stuffing which makes it more like regular pasta...
  6. Put your stuffing onto the squares (and don't overdo it otherwise you will have trouble closing them properly!) and slightly water edges so they close better.
  7. Fold over edges into a rectangle and form into tortellini shape. Set on a big plate so they are not touching and keep covered all the time.
  8. Bring water to a boil, add in salt and then tortellini. Once they are floating on top of the water let them sit for another 1-2 minutes until they are soft and fully cooked. 
  9. Enjoy pasta heaven!
Of course you can use anything to stuff your pasta, probably even nutella... might need to check that out for you guys, to me it sounds like a legit idea... but anyways you can stuff your tortellini with all kinds of stuff just make sure if you are using meat that it's fully cooked through before. It's been a while...

Sorry dear internet - I know it's been too long now! I've been having a lot of stuff happening around me and life was all crazy and what not. But I am back now with not one but two cute breakfast ideas in a Jar for you! So please enjoy and be sure I am very sorry for not posting in so long!

 Protein packed Banana Overnight Oats

  • 1 Banana
  • 3|4 cup water
  • 1-2 tbsp chia seeds
Mix and let sit in the fridge overnight stirring 2-3 times before going to bed.

I filled the cup with a leftover pumpkin muffin - let me know if you want the recipe - some cottage cheese and topped it off with some blueberries.





Kiwi- Chia Mousse


  • 2 Kiwis
  • 1|2 cup water
  • 2tbsp chia seeds
Mix and also let sit overnight. This mousse makes a perfect pair mith some fresh mango. I also added some cottage cheese and popped amaranth seeds.



So if you are having a lot going on just like me at that very moment these are some great ideas to have a simple quick breakfast in the morning and I can not stress enough about how important eating breakfast really is!

Veggie-Stuffed-BellPepper and Sweet Potato Fries


  • Bell Pepper
  • Grated Veggies:
    • Cauliflower
    • onion
    • sundried tomato
    • carrot
    • peas
    • eggplant
  • cottage cheese
  • sweet potato
  • baby tomatos
  • tomato paste
  • dry tomatos
  • seasonings
  1. Preheat oven to 200°C and cut your veggies
  2. Sautee veggies in a pan -  let cool
  3. While veggies cool down cut your sweet potato into frie stripes
  4. Place fries on a lined baking try and season with salt, pepper, oil and whatever you desire
  5. Stuff your bell pepper with Veggie mix and place into a small baking sheet as it might loose some water
  6. Place both in the oven and let cook for about 40 minutes
  7. Meanwhile you can mix your tomato paste and dried tomatos for the sauce
  8. Season with what you desire - I was using soy sauce, salt, pepper, basil, bell pepper flakes, and just for fun throwing in two strawberries
  9. Blend all your sauce ingredients and top with freshly cutted baby tomatos
  10. Enjoy your warm comfort meal <3

Quick Mugcake

I basically felt like having a mugcake et violá it actually turned out amaaaaazing! Can't wait to make a chocolaty version of that!



Banana Protein Mugcake:

  • 1 mashed banana
  • 2 tbsp coconut flakes
  • 1 tbsp almond meal
  • 1 tbsp chia seeds
  • 2 egg whites
  • 1 tsp baking powder
  • 1 scoop protein powder
  • sweetener if you'd like some
Just mash up all the ingredients and microwave for about 1,5 minutes pause for a couple seconds and give it another minute - and you are done!

It's birthday week!

I'm saying birthday week not because I love having birthday so much I want to celebrate for a whole week - but because there are so many birthdays this week. It was my bestfriends birthday on April 12th, my grandpas on April 13th, mine on the 15th and my sisster's tomorrow, April 17th. This is not only a very beautiful time spent together but also pretty stressfull. Still I had a great brithday which was also very relaxing due to the fact that all my guests will be coming over tomorrow and my sister and I celebrate a big party togerther!






Still I made a litte fully raw cake - which for me was the perfect idea for such a great sunny and warm day!




























Small Fully Raw Apple Pie:

  • Around 6 Apples
  • 3 cups cashews
  • 2-3 cups dried pitted dates
  • 1 cup dried figs
  • 1 cup mulberries
  • cinnamon and vanilla to taste

  1. Blend together mulberries, cashews, a couple of figs and around 1 and 1|2 or 2 cups of dates in a food proccessor. Feel free to adjust the amount of dates or nuts or add in water to consistancy and desired amount
  2. Press mixture into a cakepan. This should be the base for your cake
  3. Use two apples, the rest of the dates and figs and seasonings to blend (with water if needed) to create a creamy but not too thick caramell spread
  4. Slice the remaining apples
  5. Place apples and caramell on top of your base altering inbetween the layers
  6. Let sit in the fridge for at least an hour and enjoy <3

Quick baked potatoes

What's better than a colorful plate on a grey day? Nothing! Well probably chocolate but let's not go into depth with that ... 

;)



Tasty mixed salad, organge and grapefruit and stuffed potatoes! I just mixed a couple leftovers and created the best and fastest baked potato recipe I ever tried!

Stuffed Potatoes:


  • 3 midi potatoes
  • leftover grilled chicken 
  • 1|2 morzarella ball
  • 2 scallions
  • 2 sundried tomatoes
  • seasonings (salt, pepper, red bell pepper, Ruby Roast)
  1. Wash potatoes and pin with a fork
  2. Place them in the microwave for 10 minutes
  3. Cut all the other ingredients into small pieces
  4. Cut open potatoes carefully (they might be really hot) and fill with your stuffing and seasonings
  5. Place into microwafe once more for 2-3 minutes
  6. Enjoy your great meal! <3
So I also want to take the chance to tell you some more about 'Kindeskinder' as they actually create the best seasonings ever! I tagged Ruby Roast for you - the seasoning I put on almost everything I eat. Still it tastes best on a buttered piece of bread as it has such a great flavor without anything else to it! Banana Ice Cream Lasagna

Because why not?! Actually while I made this I felt so genious that I started to ask myself why I haven't thought of this anytime earlier! But as this was the first try I already found something to do better next time - which would be cutting it differently. Sounds awkward? It actually does make sense though! Did you ever eat something just in a different shape and it tasted totally different? Take pasta for example - taigatelle does actually taste totally different than fusilli or spaghetti. So talking about pasta we should make our way back to lasagna - ice cream lasagna - which by the way also tasted great the way I cutted it this time but next time I will defenitly cut it in small stripes which makes you taste the flavors way better! 




Banana Ice Cream Lasagna:


  • frozen bananas
  • Banana waffles (Basic recipe: 2 bananas, 1 cup oats, 1 cup liquid)
  • toppings
You can basically use any kind of ice cream, toppings, or waffle you want! This time I was making some banana waffles, let them cool and then rolled them out very flat. I made some nana ice cream in the blender and started with my lasagna. I used a waffle first then spread some ice cream and topped this with banana slices. Add a waffle next, more ice cream and more toppings. Continue until you run out of goodies! I also topped some blueberries and coconut. After you are done layering put back into the freezer to harden again. Next time I want to add in some chocolate and cookie crumble! Have fun and enjoy making and especially eating! <3

Salad Wraps:

  • Leaves of iceberg salad
  • whatever filling you desire - I used:
  • Cottage cheese
  • Egg
  • Chicken slices
  • Avocado
  • Seasonings
Just add all your stuffing ingredients to the leaves and enjoy your wrap! <3

Back on track

So now that I am back from banana Island I am still not able to let go of all the great nanas! I just created a Banana Ice cream Lasagne for dessert tomorrow - so excited how this turnes out! Today I had a yummy chia-overnight oats-banana-chocolate mash for breakfast and it was sooo delicious that of course I wanted to share the recipe with you guys :)





















Chocolate Protein Overnight Chia Oats:





  • 1 banana
  • 1|4 cup oats
  • 1|4 cup chia seeds 
  • 1|2 cup water
  • 1|2 cup chocolate protein milk (Muscle Milk)
  • Hafervoll Bar and pomergranade for topping
Just mash all the ingredients and top with whatever you want to. I liked my favorite chocolate protein milk for you guys and the yummy Hafervoll flapjack! I was using chocolate hazelnut today and I really love all the natural flavors coming together <3

Banana Island Recipes

So you are eatimg bananas. Doesn't that get boring as hell?


Not at all ;)



But here is the great thing: Sole Ingredeient for all recipes - Banana!



Banana Smoothie Bowl:
  1. Mash half a nana and place on the bottom of your bowl
  2. Mix two - three bananas in a blender and add water to desired consistancy - I like to use just a little to have a creamy consistancy
  3. Top off with half a sliced banana






Banana Ice(dream)cream:
  1. Freeze banana chunks and blend with just a little water






Banana Wraps:

  1. Blend 2 Bananas without or only a little water
  2. Spread thinly on a lined baking sheet and bake for an hour, set on 150°C
  3. Fill with mashed banana and dried banana pieces

My second time visiting Banana Island

So you guys as I just finished school I thought it was a great time to have a beautiful vacation. For my destenation I have choosen Banana Island - due to the great experience I've made last time! So if you are up already googeling wherever Banana Island actually is I will let you know. It's right within you!  So bad news for me - I am acuatlly still sitting at home!
It is the glorious destination you will find yourself at once you decited to clean up your life and especially your diet and stop eating aything that is not Nana!

Sounds crazy? It is!

But as I said - this is my second stay on Banana Island and I would like to tell you why!




First things first - why Banana Island - what is so beneficial about it?

Well I did some research after I found out about the special 'detox'. So all informaton provided is from the web plus some added experience.  I decited to try Banana Island for the first time eating bananas for three days. You can only do one day if you desire or even a whole month. As detox fully shows its benefits from the second to third day I decited to go for 3 days. I have had problems with amost everything I ate for the past year now so I was up to anything that might help me a little.

So here are some bananafacts:

  • Bananas are great helping your digesting system but you gotta watch out : Your Nanas need to be ripe otherwise they might actually not help your digestion but cause bloating
  • Bananas contain all beneficial Vitamins you need 
  • They are filling and of great taste
Sounds like something worth trying doesn't it?

Actually cou could Mono-eat any fruit you want to because the mono-meal effect itself is what is great for your body. Eating one ingredient only calms down your digestion as your body has to work with the one thing only so it is not too much work for your stomach as you can imagine. Going back to the fact that you could use any fruit  bananas- in my eyes- is the best and cheapest option. A lot of people also try mangos or dates but I don't have any expirience with that so far.

But what are my experiences and what can you expecht from banana Island?

  • Your sleeping gets better
  • You feel refreshed inside and out (clear skin)
  • My stomach ache -which is replying on every food I eat) was not a problem at all
  • You feel full but not stuffed
  • I felt energized and healthy
  • You don't have to worry about what you're gonna cook - duh!

Did I also have some negative reactions to it? Not really to be honest. The thing about banana Island is that is not really community friendly. You have to plan ahead. You need to make space for three days not dining out with anyone, not being scared to tell people who invite you over that you are not gonna have anything more than bananas or Tea, and of course - the part that I call most fun - buying like 60-80 Bananas at once at the local store!

I actually have to admid that I did not get sick of bananas at all - I actually love them even more now. I did get sick of the thought of having something sweet again to eat during the 'therapy'. I am one of those people who need something sweet right after eating something salty and the other way around so eating the sweet bananas only was really being a challenge every now and then but certanly not the whole time!

Life Changing Chocshake

Chocolate protein Shake:

  • 1 small frozen nana
  • 2-3 tbsp plain soy yogurt
  • 1 scoop chocolate protein powder
  • 1 tbsp peanut butter
  • 1 tbsp chia seeds
  • 1 cup unsweetened almond milk
Mix well - enjoy well <3

Spontaneous Easter Snack

So as my mom decited to invite the family over for easter just a day ago I came up with a quick menu to serve some goodies to them. Well menu should not be the right word here...
The cake I made I showed to you already yeasterday. today I came up with the spontaneous idea of having some stuffed puff pasties. Later I will also make an egg salad and some veggies.

Pizza Puff pastry (Makes around 20):

  • 25g butter
  • 250g flour
  • 1 egg
  • pinch of salt
  • 125-150 ml water
  • homemade pesto
  • sundried tomatoes
  • cream cheese
  1. Melt butter and mix with flour
  2. Add egg and salt and stir the crumbely dough
  3. Add water one by one until the batter reaches a good consistancy
  4. Let sit in the fridge for about 30 minutes
  5. Roll dough as good as you can ( mine was very hard to handle because it was very stiff)
  6. Spread some more butter on one half and sprinkle edges of the other half with water
  7. Fold over dough in the middle and roll evenly once more
  8. Fold over the dough once more so it gets to the size of one third
  9. Roll out once more and repeat folding in once more
  10. Let dough sit for another 20 minutes
  11. Roll out dough for the final filling
  12. You can basically fill the puff pastry with anything you desire, I was using homemade pesto (let me know if you are interested in the recipe), cream cheese and sundried tomatoes
  13. Bake pastries for about 20 minutes 200°C
  14. Enjoy once cooled down <3

Happy Easter!


I'd like to wish all of you a happy easter!



This time I am celebrating not only with a cute bunny cake but also with a lot of great and healthy organic food!



Green Pasta Dream (serves 4):


  • 3 cups green pasta
  • 2 cups pulled chicken breast
  • 1|4 head white cabbage
  • fresh garlic
  • 2 Scallions
  • 10 sundried tomatoes
  • 4 cups brussels sprouts
  • 2-3 tbsp tomato paste
  • seasonings (salt, pepper, cilantro)
  1. Heat coconut oil in a large pan and add cabbage, scallions, garlic and seasonings
  2. Meanwhile put some pasta water on the stove
  3. Let veggies steam for about 5 minutes and add quartered brussels sprouts and chicken
  4. Add pasta to boiling water
  5. Add tomatos and tomato paste to the vegetabels
  6. Serve all together and enjoy <3

Short Trip To India



Indian Mixed Skillet with Couscous (Serves 5)

  • Small head of cauliflower
  • 3 Scallions 
  • Garlic
  • 1 cup of white slaw 
  • 2 small yellow onions
  • 3 cups of snap green beans
  • Indian mix of seasonings
  • 1|4 cup coconut milk

  • 2 chicken breasts
  • 1 tbsp cinnmon
  • 2 dates
  • 1|2 cup water
  • 1 tsp maple syrup
  • 1 Orange

  • 1 cup couscous
  • herbes
  • 1 tbsp coconut milk

  1. Cut all your vegetables and sautee in a large pan
  2. Pour couscous into skillet and add 2 cups of water - let simmer covered on low heat and do not forget to stir every once in a while.
  3. Use a third (small) pan to heat water, cinnamon and quatered dates
  4. When the water slowly starts to simmer add chicken breast and cook until all water is vaporized
  5. Cut half an orange and use the juice of the other half to add to the chicken, you can now also add the maple syrup
  6. Add coconut milk and seasonings to your vegetables
  7. When couscous has fully absorbed all the water, add fresh herbes and coconut milk
  8. When everything is fully cooked you can also add some toppings like slices wild mango and green scallions 
  9. Serve on a plate and enjoy <3

Out with the old in with the new.

There should be some time to introduce myself to you guys! 
I am Jana, almost 19, from Germany. 
I just got my matrix and now I am heading off to rule the world! 

...Just kidding. 

Obviously I am not doing all the crazy stuff you could ever imagine but I do what I love and I do what I can do best - I cook. Of course that is not all that I do currently but it takes plenty of my spare time to be honest.... and basically I wouldn't want it any other way. 

I would like to study nutrition as soon as I am able to start college so right now I am practising what I love most - learning about food and nutrition.

I myself changed a lot these days and so does my lifestyle. Today was the first time my mother and I went to the local weekly market to buy some fruits and veggies and I must say I am so impressed. I used to always look for local foods in supermarkets but there is no better choice than buying from your local farmers. Just have a look at our great variarty of goods:




So as much as these fruits and veggies are shining as much do I want to shine from within - which is why I eat those - duh! I feel like finishing school is a very fresh start for me and does make me shine a little more so now I am working to keep that sparkle up and make it grow day by day.

To have some space in the fridge for all the new goods I needed to make so space which ended in a great leftover mix baked deep dish!



Veggie Deep Dish bake (Serves 4)

  • 1 packet Tofu
  • 4 Eggs
  • 1 cup plain yogurt
  • seasonings ( I was using salt, pepper, red bell pepper powder, chive, garlic)
  • Veggies of choice, I used:
    • leftover potatoes (around 1|2 cup)
    • 3 scallions
    • 1|4 cup corn
    • 1 red bell pepper
    • 1|4 white cabbage
    • 1|4 cup peas
    • 1 yellow onion

  1. Preheat oven to 200°C and grease baking dish
  2. Cut all the veggies and mash together with crumbled tofu and remaining ingredients
  3. Pour mixture into pan and bake for 35-40 minutes
  4. Enjoy your healthy leftover meal <3





Ginger Smoothie Bowl

Don't judge - just try!



Ginger Smoothie Bowl:


  • 1 banana
  • pinkie tip size ginger
  • 1|2 cup water
  • orange
  • 200g natural yogurt
  • 1|4 cup cottage cheese
  • 1 tbsp chia seeds
  • 1 tbsp coconut flakes
  • 1 handful goji berries
  1. Blend the first four ingredients in a smoothie blender
  2. Mix with yogurt and cottage cheese in a bowl
  3. Top with chia, coconut and goji
  4. Enjoy the mix of delicious flavors <3

Chocoshock

Needy of chocolate? Trust me - we know that feeling!


Powerful Chocolate Protein Bowl:

  • 200g Greek yogurt
  • 1 scoop chocolate protein
  • 1 tbsp unsweetened chocolate powder
  • 1 tbsp chia seeds
  • 1 Banana
  • tigernut slices, coca nibs and goji berries for garnish
Just mash the banana and mix all ingredients. If the consistancy is too thick - which for me was the case - just add a little water or milk to have a more creamy consistancy.

Tropical Carrot Soup


Tropical Carrot Soup (serves 4)


  • 5 carrots
  • 1 onion
  • 3 tomatoes
  • 1 orange
  • 1 potato
  • 1 cup of pineapple
  • seasonings (Kurkuma, Curry, Pepper, Salt, Black Cumin, sweet soy sauce)
  • 2-3 cups veggie broth
  1. Cut all Veggies and Toss them in a deep dish for around 5 minutes
  2. Add 2 cups of veggie broth
  3. When all veggies are cooked trough blend them into a soupy consistancy and add more water and milk if you want it to be more creamy.
  4. Let fully cook and add seasonings.
  5. Top with green aspargus tossed in a pan with maple syrup if you want to
  6. Enjoy your soup with a twist! <3

Learning by doing

This morning I felt like tyring something new. We all should try something new every once in a while, right?! So I wanted to create a simple waffle recipe and you should know - I have had some trouble with our new waffle pan here and there. So it was not really a big surprise my new batter did not turn out totally great to bake but man - it was totally great to taste!




Lemon Puppyseed Waffles (makes 2 belgian waffles)


  • 1 cup oats
  • 1 banana
  • 1|2 cup greek yogurt
  • 1 tbsp lemon
  • 1 tsp poppyseeds
  • 1 tbsp chia seeds
  • dash of baking powder
  • 3|4 cup of water (to consistency)
  • Blueberries
  1. Mix all ingredeients except blueberries
  2. Fold in blueberries and bake in buttered waffle pan
  3. Enjoy if not falling apart :D <3

I will let you know when I made the perfect recipe - until then keep on reminding yourself - you will only reach success if you stand up one more time than you fell down!

Finally - asparagus!

I really don't know when it happened that food got me more excited than everything else in my life but ohwell .. so as you can probably guess by the title this time being excited was all about finding green asparagus in the grocery store for the first time this year which obviously meas spring is finally here - duh!



Fresh spring platter (serves two)


  • a bundle green asparagus (around 20)
  • two servings of tiny potatoes (around 10)
  • 1|2 apple
  • 1 onion
  • Cauliflower Muffins
  • Veggie seasonings (Thyme, Rosemary, black pepper, orange pepper, bell pepper powder, garlic, salt)
  • Sprinkle of oil
  • 1|2 cup greek yogurt
  • 3-4 scallions
  • 1 tbsp cream cheese
  • Dip seasonings (bell pepper powder, salt, black pepper, basil, fresh chives)
  1. Preheat oven to 200°C
  2. Trim aspargus and cut potatoes into quarters. Slice apple and onion into thin slices.
  3. Spread on a baking dish and sprinkle with a little oil and seasonings.
  4. Bake for around 25 minutes until crispy golden. You can add the cooled cauliflower muffins 5 minutes before taking out the rest to heat them up
  5. Meanwhile you can whip up your dip using the reminding ingredients
  6. Enjoy your meal <3

Cauliflower Muffins

Tonight I am going to hang out with some friends and we all bring food. I decited to go for some cauliflower Muffins, as they are not only healthy but also tasteful, easy and quick. I also mixed up a little dressing using the rest of the sauce from todays lunch and mixed it up with some more avocado and plain jogurt.



Cauliflower Muffins (makes around 25)

  • 1 head cauliflower
  • 1|4 cup cheese 
  • 3|4 cup cottage cheese
  • 4 eggs
  • seasonings (I am using: salt, black pepper, thyme, rosemary, basil, garlic)
  • 2-3 tbsp pure tomato sauce
  • poppyseed and sesme seeds to garnish
  1. Prehet oven to 200°C
  2. Grate cauliflower until it becomes all ricy
  3. Mix all ingredients except toppings
  4. Fill greased muffin tins or silicon wrappers and top with poppyseeds and sesme seeds
  5. Bake for around 25 minutes until crispy golden-brown
  6. Enjoy warm or cooled :) <3

Tropical Noodles

So what's for lunch I asked myself and I'm telling you - I'm just all about that zucchini lately. Searching through the fridge I found half a mango et viola: Lunch is going to be slightly tropical today!

As I felt like my platter looked to green I added a little red as well - eat the rainbow <3


Tropical Noodles (serves one small portion)
  • a handful spinach MusclePasta (I'm using this brand)
  • half a zucchini
  • 3 Scallions
  • 1 cup of chopped mango
  • 1|4 cup avocado
  • Seasonings to taste (I am using: LemonPepper, Cilantro, Curry)
  1. Spiralize your zuccini and toss into a pan with a little oil. Meanwhile cook your Pasta until it reaches desired consistancy.
  2. Blend together the white ends of the scallions, avocado, mango and seasonings. If you want the sauce to be less creamy feel free to add a little water.
  3. Throw the noodles into the pan next to the zucchini and toss with sauce. 
  4. Add to plate and garnish with green ends of the scallions, tomato and chilli flakes if you'd like to. You could also add different toppings like chopped walnuts or roasted pine nuts.
  5. Enjoy your green meal <3
Please keep in mind that this recipe only serves a small portion. If you are very hungry feel free to add more pasta and|or zucchini! There will be a lot of sauce so you will not have to worry about the amount of the sauce. Have fun cooking!

Win for finally creating the perfect Zoats Recipe! 

Zoats? What does that even mean? Zoats are a great low carb glutenfree oats replacement and - which is so much more important to me - a great way to sneak in some veggies into your daily meal plan starting with breakfast already! Also, this is a great way to reuse the Zucchini parts you removed for the boats (wink, wink! ;)
It actually took me a while and a lot of not-so-yummy-creations until I now found the right combination of ingredents that work perfectly well together.





Zoats
  • 1 cup Zucchini 
  • 1 small banana 
  • 1 tsp flax seeds 
  • 1 tsp coconut flour 
  • 1 tsp chia seeds 
  • 1 scoop protein powder 
  • 1 egg 
  • 1|2 cup water 
  • Pinch of salt, cinnamon and baking powder 

  1. Mix everything and cook on slow heat until it reaches right consistency. Stir a lot! 
  2. Add toppings and enjoy warm or cooled

Zucchini Boats

So today was a very slow kind of day. One of those days when you are really happy you already planned what to cook the night before (since the leftovers need to disappear).  Now that I finally got my matrix I feel like there is nothing to do but hang around and enjoy life. Does not sound bad though I guess :)

We had some leftover ground meat that was cooked already and since I really wanted to cook zucchini in a loooong time this was a decision made really easy today ;)


Zucchini Boats: 
(serves around 3-4)


  • 3 Zucchini
  • 1,5 cups ground meat
  • 2 tomatos
  • 3 Tablespoons pure tomato sauce
  • 4 mushrooms
  • 1 onion
  • 1|3 cup cheese
  • seasonings to taste (I was using salt, black pepper, tumeric, red bell pepper powder, hot pepper, gerlic, oregano, soy sauce)
  1.  Preheat oven to 200°C. 
  2. Dice onion and mushrooms together with seasonings. 
  3. Add meat (mine was precooked as mentioned already but you could also use uncooked). 
  4. Once Everything looks well cooked so far, add tomatos and sauce. 
  5. While your sauce in cooking prepare the boats. Cut the Zucchini in half - vertically and horizontally. 
  6. Scoop out a little cave in the middle of the zuccini and put the halves into an oven-safe-pan. Add sauce to boats and sprinkle with cheese.
  7. Bake for 20-30 minutes until golden and crispy on top.
  8. Enjoy your meal :)

Start your day off right

In order to have a great day it only needs one thing. A great start! For me personally - a great start means to go for a (very short!) jog in the morning, have a warm espresso afterwards and enjoy a great bowl of power-filled-muesli! Also, I start my day off with a loooot of water. Keeping yourself hydrated is the number one rule for being perfectly awakened. Here is the basic recipe for my Power muesli <3


Power Muesli



  • 1|3 cup Oats
  • 1|3 cup seeds such as Sunflower seeds, Pumpkin seeds etc.
  • a handful nuts 
  • a handful dry fruits such as raisins, goji berries or apricots
  • 1 cup of fresh fruit such as strawberries
  • one ripe banana
  • 1 cup of greek jogurt mixed with cold water for perfect consistancy
Just mix and match & of course - enjoy! <3
