Indian Mixed Skillet with Couscous (Serves 5)
- Small head of cauliflower
- 3 Scallions
- Garlic
- 1 cup of white slaw
- 2 small yellow onions
- 3 cups of snap green beans
- Indian mix of seasonings
- 1|4 cup coconut milk
- 2 chicken breasts
- 1 tbsp cinnmon
- 2 dates
- 1|2 cup water
- 1 tsp maple syrup
- 1 Orange
- 1 cup couscous
- herbes
- 1 tbsp coconut milk
- Cut all your vegetables and sautee in a large pan
- Pour couscous into skillet and add 2 cups of water - let simmer covered on low heat and do not forget to stir every once in a while.
- Use a third (small) pan to heat water, cinnamon and quatered dates
- When the water slowly starts to simmer add chicken breast and cook until all water is vaporized
- Cut half an orange and use the juice of the other half to add to the chicken, you can now also add the maple syrup
- Add coconut milk and seasonings to your vegetables
- When couscous has fully absorbed all the water, add fresh herbes and coconut milk
- When everything is fully cooked you can also add some toppings like slices wild mango and green scallions
- Serve on a plate and enjoy <3
