Homemade Tortellini

So I have not cooked in too long now due to not feeling too well but here I am - fully back and ready for a fresh overall start. So what could be best to celebrate a huge comeback? Trying something completely new I thought. So here I went full out - homemade pasta. Not only pasta but tortellini. I just figured (afterwards) that this was a huge risk to take but it actually turned out amazing! Not to say this was probably the best meal I ever cooked! So of course I wanted to share the recipe with you guys, have fun making them and more fun enjoying them! <3




Tortellini in Tomato soup (Serves 3) :

For the soup:
  • 2 Cups veggie broth
  • 1 cup pasted tomatoes
  • water as desired
  • 1 onion
  • handful sundried tomatoes
  • seasonings
  • fresh basil
For Tortellini:
  • 1 cup flour
  • 2 eggs
  • salt
  • stuffing:
    • 1|2 cup cottage cheese
    • 1|4 cup cream cheese
    • 1|4 cup parmesan
    • seasonings
  1. Prepare your pasta dough by piling the flour and add salt and eggs into the middle of the flour slowly mixing in with your fingers. Take your time for this part and slowly fold in flour into eggs until you reach a good dough like consistency. Set aside for 30 minutes.
  2. Meanwhile prepare your stuffing by just mixing all the ingredients and add in seasonings like bell pepper powder, salt, pepper and dried basil.
  3. Chop onion and dry tomatoes and sautee in coconut oil. Season with smoky salt, fresh basil leaves and pepper.
  4. Add tomato paste and broth and bring to a simmer. Add in more basil if you want to and let cook on low heat.
  5. Roll out your dough and cut into squares. I found out that the smaller the squares the better the tortellini will turn out - otherwise you will have too much dough filled with too little stuffing which makes it more like regular pasta...
  6. Put your stuffing onto the squares (and don't overdo it otherwise you will have trouble closing them properly!) and slightly water edges so they close better.
  7. Fold over edges into a rectangle and form into tortellini shape. Set on a big plate so they are not touching and keep covered all the time.
  8. Bring water to a boil, add in salt and then tortellini. Once they are floating on top of the water let them sit for another 1-2 minutes until they are soft and fully cooked. 
  9. Enjoy pasta heaven!
Of course you can use anything to stuff your pasta, probably even nutella... might need to check that out for you guys, to me it sounds like a legit idea... but anyways you can stuff your tortellini with all kinds of stuff just make sure if you are using meat that it's fully cooked through before.
