If there is one thing that is just as delicious as easy to make - for me it will forever be quiche. whenever I don't feel too much like cooking (and I am not too hungry at the moment and would be able to wait around 40 minutes until I get to eat...) Quiche is the perfect solutuion to all my problems :)
Usually I prefer crustless quiche but this time I felt like trying something else. So here is my recipe for an easy tasty deep dish quiche.
Vegetarian quiche: (Serves 4)
Crust:
- 3 Tbsp flaxseed meal + 1 Tbsp water (mix and let sit for a couple minutes)
- 1 cup oats
- 1 cup almonds
Filling:
- 1 block tofu (200g)
- 1,5 cups leek
- 1 egg
- 1|2 cup cottage cheese
- 5-6 sundried tomatoes
- 1 Tbsp dry yeast
- Preheat oven to 200°C.
- Put all crust ingredients into a food processor and spread dough into oiled crust pan.
- Use a fork to pike holes into dough and put into the oven for 15 minutes.
- Meanwhile mix and season all ingredients except the yeast and tomatoes for the filling.
- Take out crust and fill with dough, Spread yeast flakes and tomatoes on top.
- Put back in the oven for 30-40 minutes.
- Enjoy your meal :)
